#3: Scramble, Scramble Scramble

Consistently lazy me = consistently lazy meals. I make scrambles daily because they're super dups easy. Not sure if this qualifies as real cooking...hehe but it looks and tasted so good.  Egg whites, corn, red onions, broccoli, chicken, salt&pepper.  Special ingredient--oyster sauce!! Nom nom nomz.

#2: Rotini Pasta with Chicken, Pesto, & Sun-dried Tomatoes

Probably one of the first things you should know about me is that i love love LOVE pesto.  I could probably enjoy anything if it had pesto in it.  My mom introduced it to me in 8th grade and I've been in love with its basil-y goodness ever since.

This isn't from a recipe--just something I thought would taste good.  Because obviously, it had pesto in it.

Also, sidenote: My roommate, Rebecca, has the most AWESOME THING EVER for someone trying to eat healthy. She has an ounce scale!! So you can weigh portions...obsessed with that thing.

Here are the ingredients:


  • 2oz whole grain Barilla rotini pasta
  • 1 tbsp pesto with basil [I used Kirkland brand--my pops bought me a huge jar from Costco ;), but any brand would work--pesto is pesto...always amazing]
  • 1/4 cup sun-dried tomatoes [got mine from trader's]
  • 1 chicken breast tender from Trader Joe's Boneless Skinless Chicken Breast package
  • 2 tsp olive oil
  • a couple pinches of salt&pepper!

Easy peasy, right?! First, bring water to boil and cook the pasta. It took a while for the pasta to be ready for me because I like noodles soft.  Defrost the chicken in a bowl of water, pat down with paper towel, cut into pieces the size of your choosing, and sprinkle with salt and pepper on both sides.  Heat 1 tsp olive oil in a pan, add chicken and heat until cooked.  


Drain noodles and add noodles, pesto, 1 tsp olive oil, and sun-dried tomatoes to the chicken.

Mix then add a pinch of salt and you're good to go!


It turned out to be about 500 calories.  A bit steep for someone trying to be healthy but it could be your splurge meal of the day.  Trust me when I say it was deeeeelish!

Nothing this easy would taste as good without pesto.  I sound like such a pesto nut--because I truly am.

#1: Chicken Piccata

First grocery shopping trip with a list of things from a recipe--love trader joe's :)


I'm trying out recipes from this blog called Eat Yourself Skinny, you know, trying to get in shape and all. I wish my pictures came out as cute as hers!  But alas..I have dark purple plates, very used pots, and a bland kitchen so I've done what I can to make my concoction presentable!

So my first post--my first dish I've ever cooked following a recipe! The recipe came from here and I don't know HOW she made her dish look so good but it definitely tasted delish!! If you don't like capers or lemon, the taste of them might be too strong for you.  This dish was really easy to make, I probably didn't follow it as well as I thought since I did have way too much sauce leftover [which I will be using as dip for my pita crackers ;)].

olive oil [which i substituted for the canola oil that it calls for], pepper, and salt smelled good already!

Serving size was 2 cutlets..I ended up eating all 4 cause it was addicting! ;) [I just realized that that's why I probably had leftover sauce..because the recipe called for 8 cutlets..duhhh -___-]


like our tablecloth? got it for 5 bucks when valentine's day puked all over target shelves :)

New Beginnings!

Woohoo! I've had this blog for a while and wrote random personal entries on it a few years back but I decided to redo it and create a blog to share my cooking adventures! I LOVE food and try to eat as healthy as possible [like everyone, I have setbacks..mainly desserts ;)] and 2012 is the year I'm going to try and expand my awesome quesadilla-egg scramble-fried rice skills and make more varied and intricate dishes [healthy ones of course!]. I'm already big on baking but you can't live on baked goods! So, let's see if I can actually cook!
